Ingredients for the chicken curry:
- 500g chicken, cleaned and cut into small pieces
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tbsp Malvani masala (or a blend of garam masala, coriander powder, cumin powder, and red chili powder)
- 1/2 tsp turmeric powder
- 1 tsp sugar
- Salt to taste
- Oil for cooking
- Water as required
Ingredients for the Vade:
- 2 cups all-purpose flour
- 1/2 cup semolina
- 1/2 tsp salt
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Oil for frying
Instructions for the chicken curry:
1. Heat oil in a pan and add chopped onions. Saute until it turns golden brown.
2. Add ginger-garlic paste and saute for a few minutes.
3. Add chopped tomatoes and cook until it becomes soft and mushy.
4. Add the Malvani masala, turmeric powder, sugar, and salt. Mix well and cook for a few minutes until the raw smell of the spices goes away.
5. Add chicken pieces to the pan and mix well to coat them with the spice mix.
6. Add water as required to get the desired consistency of the curry. Mix well and bring it to a boil.
7. Cover the pan and simmer for 20-25 minutes until the chicken is cooked through.
Instructions for the Vade:
1. In a bowl, mix together all-purpose flour, semolina, salt, turmeric powder, and red chili powder.
2. Add water as required to make a smooth dough. Cover the dough and let it rest for 15-20 minutes.
3. Divide the dough into small balls and roll them into puris.
4. Heat oil in a pan and fry the puris until they turn golden brown and crispy.
To serve, place a few puris on a plate and top them with the chicken curry. Your delicious Kombdi Vade is ready to enjoy!
