Prawns Biryani | Kolambi Bhat


Ingredients:
  1. ½ kg basmati rice soaked
  2. 20-30 pieces of prawns
  3. ½ inch ginger
  4. 6-7 cloves ( lavang)
  5. Garlic 15-20 cloves
  6. 6-5 green chilies
  7. 2-3 bay leaves ( Tej Patta )
  8. 2 teaspoon coriander seeds
  9. ½ teaspoon cumin (jeera)
  10. 3-4 big cinnamon sticks (dalchini)
  11. 2 onions medium chopped
  12. 2 tomatoes finely chopped
  13. ½ cup Coriander for Masala
  14. ½ teaspoon turmeric
  15. 1 tablespoon red chilies powder
  16. Salt to taste


Method:

Step 1:
Grind together green chilies, ginger, garlic, cloves, cinnamon, coriander seeds, coriander leaves by adding a little water in a mixer and create smooth paste.

Step 2:
Heat oil in a non-stick pan and add ½ teaspoon cumin (jeera), bay leaves (tej Patta), turmeric, red chili powder and onion. Cook till onion turns light brown.

Step 3:
Then add finely chopped tomatoes and mix well after adding the masala paste to the pan that we just prepared.

Step 4:
Add prawn pieces to the pan and add salt, mix it well with the paste. Make sure that masala coats the prawns evenly.

Step 5:
Then add rice and 3 cups of water in the pan and mix well.

Step 6:
Cover and cook till rice is done, 20-25 mins.
Then switch off the heat once rice is cooked. 

Let it settle for a few mins. Garnish with fresh coriander leaves and serve hot.
